Editor’s note:  In terms of omega 3 fatty acid content, canola oil and flaxseed oil are the best you can eat. Olive oil contains quite some saturated fatty acid and the ratio of omega 6 to omega 3 fatty acids is about 16 to 1 (ideally 4 to 1, cancer patients may need to get the ratio to 1 to 1).  A couple of bad things about many plant-derived fat or liquid fat include they are not thermally stable and omega 6 fatty acids promote inflammation which triggers many chronic diseases including cancer, heart disease and diabetes. Cancer patients should avoid cooking fat except that they may use flaxseed oil and omega 3 fatty acids like DHA and EPA. Particularly DHA.
